“Hibiki” is a Japanese word that means echo and harmony. Sushi Hibiki is the brainchild of Makoto Saito, also the head chef of the restaurant. He hopes to express this harmony to his customers by providing good food coupled with a warm dining experience at Sushi Hibiki.
Makoto Saito has been a sushi chef for more than 20 years, having worked in countries such as Japan, Australia, Italy, Israel, and Malaysia. Prominent restaurants that he has worked in include The Ritz-Carlton in Kyoto and Kurata Japanese Fine Dining in Malaysia. Saito emphasises that the most valuable attribute of a sushi chef is the ability to create a comfortable environment for customers.
